Brandy Xmas Cake by the Fruitcake

Once again this year, I’ve had requests for my Brandy Christmas Cake recipe, so here it is. Please keep this in your files as I am beginning to get tired of typing this up every year! grrrrrr!

1 cup sugar
1 tsp baking powder
1 cup water
1 tsp. salt
1 cup brown sugar
Lemon juice
4 large eggs
Nuts
1 bottle brandy
2 cups dried fruit

Sample the brandy to check quality.

Take a large bowl; check the brandy again to be sure it is of the highest quality...Repeat.

Turn on the electric mixer. Beat one cup of butter in a large fluffy bowl.

Add 1 teaspoon of sugar. Beat again.
At this point, it is best to make sure the brandy is still OK.
Try another cup just in case.
Turn off the mixerer thingy.  Break 2 eggs and add to the bowl and chuck in the cup of dried fruit.

Pick the fruit up off the floor.
Mix on the turner.If the fried druit gets stuck in the beaterers, just pry it loose with a screwdriver.

Sample the brandy to test for tonsisticity. Next, sift 2 cups of salt, or something.  Check the brandy. Now shift the lemon juice and strain your nuts.

Add one table. Add a spoon of sugar, or somefink - whatever you can find.  Greash the oven. Turn the cake tin 360 degrees and try not to fall over.

Don't forget to beat off the turner. Finally, throw the bowl through the window.

Finish the brandy and wipe the counter with the cat.

Kimchi-Land

Karen, who is my BFF (not Boys Before Flowers) just came back from Seoul. The Land of Kimchi and Korean drama and K-pop. Most of us were rather envious but happy for her, that she got to experience Seoul. 

I have been there on short layovers from my flying days with Singapore Airlines. I have definitely missed the shopping, kimchi and mama-san, shopping, eating, shopping... okay, you get the drift? Alright, twenty years ago, things weren't that expensive in Seoul.

Unlike Karen, I never got the chance to tour the countryside to Jeju island. Adding to that, I wasn't hooked on Korean dramas then. Kudos to Karen for going to all these places that were filmed in the K-drama. As for taking photos with my boyfriend Lee Byung Hun (Lee Byeong Heon, well, she is lucky that she is my BFF....grrr!

Dried Curried Prawns

This was an accidental dish, I had actually burnt my satay dinner earlier and so had to cooked this as frozen prawn meat defrost faster than frozen meat.

How in the world did I burned my satays???? Heck! Anything is possible with me! I blamed old age.. loss of memory... etc etc.. I had gone out to water the garden and I forgot that I had satay sticks on the grill. Good, aren't I? This reminds of another story where I 'nuked' my donuts in the microwave coz I went to answer the phone..LOL ;)

So for a fast dinner, grab the frozen prawns, thawed it out. Remove shells and devined. Then pan fry prawns and add curry paste. I used Thai Paneang red curry paste. Add very little water. Served with rice when cooked. extremely fast meal to cook. Voila! There you have it! Curried prawns and no crying over burnt chicken satays!

Mallee Grill @Thomasina

I really enjoyed my lunch at The Mallee Grill today, was dissapointed that the dinner menu was not available and I couldn't get the seafood hotpot but I settled for Rump steak with peppercorn sauce. That was nice too. I did get to have my double choc pudding, it was certainly delicious but nothing to rave about. I could have made that myself at home. A choc pudding with hot choc sauce and icecream, that's how I would normally have my choc desserts if any.

The rump steak was cooked to perfection, it was ordered medium rare and that was what I got, so I loved every bite of it.

Everyone seemed to enjoy their lunch this time. I think our last outing to Romanos was an epic fail with dried up chicken tandoori pizza for instance, which I didn't blogged about. LOL ;)

Sushi

This angry ninja was feeling hot and steamy today. I hate the humidity. I had zero tolerance for anything today.

I went 'berko' on a fly in the office today. Unlike Mr Miyaki, I did not catch it with a chopstick. I did however went after it with my rolled up newspaper and let's just say that fly won't be buzzing around me for now, he was chopped into two pieces. It didn't alter my mood though. How is the fly related to this post? It's not.

But on the way home from work, I picked up some stuff for sushi rolls to go on a carb high as it will keep me happy for awhile.

A friend said that I should bake this for Xmas, so Ninja of her! Hahahahaha... You do realised that now I will have to go hunting for these cutters.... oy! They are so cute!
