German Apple Cake by special guest Tanya Pearce.

German Apple Cake

4 Cooking Apples
1 Cup Brown Sugar
1 Cup Water
125g Butter
115g Castor Sugar
2 Eggs
2 Cups S.R. Flour
½ Cup Milk
1 ts Cinnamon

Peal, core and cut apples into thin slices
Place in saucepan with water and brown sugar
Bring to the boil, simmer gently until tender
Drain apples but KEEP syrup
Allow apples to cool
Simmer syrup until reduced by half
Cream butter and castor sugar
Add eggs one at a time
Add flour and cinnamon sifted together alternatively with milk
Place half cake mix into greased 22cm cake tin
Cover with half apples
Cover with remaining mixture
Top with remaining apples
Bake in moderate oven for 45-50 minutes
While cake is hot brush with hot syrup
